Moo Shu Noodles

My mom sent me a recipe from The Rachael Ray Show for Moo Shu Noodles. Of course, Moo Shu has nothing to do with noodles and is really eaten with pancakes, which Rachael mentions at the end of the video at that link, but I imagine Moo Shu Noodles was chosen for its catchy sound and not its authenticity. Doesn’t matter to me! My parents really liked it, so she passed it on for me to try.

My first thought was that there weren’t nearly enough vegetables in the dish! I mean, if we’re making something that doesn’t even have much to do with its name, why not go the extra mile and at least make it more voluminous with veggies? So I vegged it up quite a bit. I also made it with chicken, because that one pork dish we had a month ago was enough pork for me for a while. In this case I think they’re pretty interchangeable though. Actually, now that I’m thinking about it, I changed quite a bit from this recipe, but since it was based off Rachael’s idea, I’ll still give her some credit.

We both really liked the dish. Following these instructions we got 6 big servings out of it. You could easily add even MORE vegetables to this - broccoli, water chestnuts, baby corn, whatever - and it would be delicious and probably serve 8 people.
